Overview
There are many theories that attempt to explain why seniors don't eat as well as they should- nobody to share a meal with, reduced income, lack of skill-the important thing is that we must help to change how seniors eat. The Nutrition Consortium of NY State's research shows that for $1 spent on elderly nutrition, a minimum of $3.25 is saved in health care costs, hospital stays happen less frequently and are shorter in duration and chronic disease is reduced.
Italian cuisine focuses on the availability of fresh produce. Using seasonal products, the proposed program will combine making easy-to-follow recipes for classic Italian dishes, along with nutritional information specific to senior men and women and shopping tips.
